Homemade instant oatmeal

I eat instant oatmeal almost every single day at work. It is a morning ritual, I heat it up in the microwave and eat it while going through my email. I much prefer slow cook oats, but I don't have time for that at work (obviously). I get in ruts with my instant oatmeal - I'll go for months and months of Raison Date Walnut and then one day switch to something else and eat that day after day. Right now, I'm on a Apple Cinnamon Lower Sugar variety kick.

I came across this recipe on the Vegan Lunchbox Blog. This would be much healthier since I would control everything in it. I can't wait to try it!

well first I got on this instant oatmeal kick for a while, then I thought I'll go healthier and start doing Steel Oats oatmeal, well that takes a half hour to make and who has time for that, so that didn't last very long. Now I'm back to the 5 minute quaker oats. I can live with 5 minutes.
I'm sure everyone was just dying to know my oatmeal regimen.

That "lower sugar" oatmeal tricked me! I got really excited when I first saw it, because the girls love instant oatmeal, but it's so sweet. Then I discovered it's lower in sugar because it has splenda or something in it. I love the link to the homemade. I have a recipe from an old backpacking recipe book, but this looks yummier and more deluxe.

Aimee - I just looked on the box of the Lower Sugar oatmeal and you are right! It is one of the lesser ingredients, so I hadn't noticed it, but it does contain sucralose. Yuck! Thanks for letting me know.
