I made these yesterday. I was looking for a way to use up some dates I bought through the co-op. I adore dates but these particular ones were kind of dry and not as delish as usual. The cookies were exactly what I was looking for... chewy...sweet...nutty...goodness. No flour whatsoever. Just dates, walnuts, coconut, eggs and brown sugar. Yum.

Tasty Hedgehogs

Your mom used to MAKE THESE, except they were called "porcupines" and made of rice. :)

PS: tasty hedgehogs would make an excellent band name.
Totally awesome band name!! I have to remember that when I take my tambourine playing to the bigtime.
